the list #5

#5 watch a movie you would not normally pick out.

Tonight we went to see District 9. Our friend Nate just got back from his bachelor vacation and we wanted to hang out with him and he and tony wanted to see District 9, which I was not that excited about, but thought I would go and give it a shot, and fulfill this number on the list.

It was alright. I have a lot of opinions about the movie, none of which are super positive, but it was interesting and held my attention for the majority of the movie, despite being tired.

Afterward, we had what I considered a normal post intense movie discussion which turned into an argument between Tony and I which totally sucked. Plus, we left the kitchen a mess as we ran out to catch the movie on time after a disappointing dinner at home. And now, we came home to discover our newly fixed garage door has been open since we left. Thankfully it appears nothing has gone missing or been ransacked through.

But overall my District 9 experience was negative. Tony thought I was reading too much into it, and I thought he wasn't letting me just express my opinions about the movie. Either way, it turned into a disappointing night, and it just reminded me of why I stick to the general genres of movies I like. I don't want to pay to see something that is going to provoke such a discussion that it becomes a fight, or makes me think about creepy aliens.

I think for something that intellectual, read a book, or a short story, or a news article. For me, movies and/or TV are a release, something I don't want to have to think about or feel like it requires analyzing.

I would rather talk about something that actually matters, like politics or our own society, instead of arguing about some extremist view from some writers and directors they decided to put on screen.

Therefore, even though many loved the movie, I was not that impressed. I did not see how it wasn't just a Cloverfield-AvP movie all over again.

So there. That was my #5 expererience. Our treat for the weekend, and I just feel worse.

poor clark had his mirror ripped off by the garage... it was sad. i was sad. very sad. and mad at myself for letting it happen.

but now clark is FIXED! hooray :] 200 some dollars later he has a brand new mirror. hooray!

thank the Lord for credit cards, otherwise we would really be in a spot.

also: our garage door broke (really?!?!?!) but since we are still leasing, Tony's parents are paying for the repairs as the owners. Which is another blessing in disguise since we can put that cost on the credit card too and then pay them less rent, which will help us out during this financial down spot.

a weekend filled with fun

This weekend was fun filled and Austina came to visit. Or maybe it's because Austina came to visit :]

I had all weekend of which was a good start to begin with. Then Austina and I hung out Friday and figured out the futon situation, then procrastinated that, and instead went shopping for Shazia's baby shower. Then we had a yummy dinner at home and Austina's friend Brandon came to join. Yay! I love having people over. After that, we hung out and sorted change and chatted. Weird, but fun.

Then on Saturday we had a great time getting ready for then attending Shazia's baby shower :] yay! we ate too much, then left so Austina could be on time to have dinner with Matt :]

So then Austina came over and got ready for dinner and then they went to eat and Tony and I just hung out and ate at home. Then we invited Matt and Austina to play games after dinner and we did. Electronic Catch Phrase was the best! But Scrabble challenged our brains, and then we turned them to mush again watching Balls of Fury. We FINALLY called it a night around 1:15am. Crazy! But it was lots o fun :]

Then Sunday came and Tony, Austina, and I enjoyed church together at Woodmen Valley, then picked up Matt for a fun hike on Blodgett, where I have never been. Tony stayed home and did yard work. Yes, REALLY! We had loads of fun so we decided to extend it and celebrate Austina passing the PRAXIS :] We came home and got all ready to go out, but then got so comfy on the deck we ended up ordering pizza and drinking beer outside. It was fabulous.

We called it a night much earlier in preperation of work for the boys on Monday.

And now today, we finally got the futon up to Austina and Shazia's place :]

Back to reality... and house chores today.

the list #2

#2: Paint your fingers and toes a new color.

I haven't painted my finger or toes a color for many years, at least since early college. The last time my nails were painted at all were probably for the wedding, where they were french style. So this was a fun little adventure into my high school past when I used to paint my toes different colors every week or so for karate. I hung on to most of the colors and had a fun time picking some out for this adventure on the list. I tried to choose a color I really liked and one I didn't use as much.

light blue on the fingers :] this is an interesting color, it's really light and thin- one of my least favorites, but it was good to try it out again. i will keep it in my arsenal

Our fair cousin Bradley has gone back to Oklahoma to finish up school. It is a little odd not having him here... he was here before Tony even got home! Crazy.

I am glad he plans to come back to Colorado in December. It has been fun getting closer to him and I know Tony will miss having a golf buddy!

#6 rearrange something in your house.

This one sort of fell into my lap! Jason has moved back and he and his girlfriend Linda got a place together in Boulder, and therefore wanted their couch back. Sad yet happy. So he came and got it and then Tony and I starting talking then shopping for a new couch. Little did we know we would find the perfect one the first night we shopped!

So we have actually rearranged the house 2 times, once when the brown couch went with Jason and the green couch came upstairs, and then again when the green couch went back downstairs and the new couch arrived!

we had moved the futon in from the garage to replace the green couch downstairs and decided it wasn't worth it to put it back in the garage, so found a way for it to fit downstairs, until Austina and Shazia and come pick if up to put in their place!

the list #4

#4- Make a New Recipe

As a new housewife, one of the things I am learning how to do is to create new and interesting yet healthy meals for Tony and I's dinner.

Today I branched out in the meat department and the veggie department, plus the entire recipe

I bought boneless pork chops in bulk last time I went grocery shopping, excited about using pork and chicken and fish versus mainly just chicken.

So today being the first actual day we got to eat at home (busy week!) since then, I made pork.

I didn't know what to make so I used Spark People's recipe database since it is large and I can directly import the meal I make into my nutrition tracker- very easy! (www.sparkrecipes.com, www.sparkpeople.com)

I thought about what else I had in the house, and knew my mushrooms were going to go bad soon so I searched for a boneless pork chop + mushrooms dish.

I found this recipe:
Boneless Pork Chops and Mushrooms
Ingredients
6 boneless pork chops
salt and pepper
1-2 TBS olive oil
1 C mushrooms, slices
1 small onion, chopped

Instructions:
1. sprinkle chops with salt and pepper
2. cook on grill or in skillet until done
3. heat olive oil in pan, saute mushroom and onions until tender
4. spoon mushrooms over chops

6 servings


I of course modified it to be just for the 2 of us. I used seasoning salt instead of regular salt on the chops, and put too much, resulting in them being too salty. We grilled them and they cooked great!

I guesstimated olive oil and mushrooms, I used a lot of mushrooms- we both love them!- and I use a misto olive oil spray to cut down on how much we use. I really like it. I also used frozen pre-diced onions instead of fresh. Buying fresh onions for cooking usually results in me throwing it away since we don't use it fast enough. I would have liked being able to have larger onion pieces, which we could also have cooked in the grill pan, maybe strips, but the convenince of the frozen onions is really great!

My original plan was to grill the pork chops but to saute the mushrooms and onions in a pan on the stove, but Tony got home and was helping and put the mushrooms in the grill pan on the grill while I was getting the onions going inside. So he finished the mushrooms on the grill and I just put the mushroosm in with the onions last minute to toss and lightly season them together.

I served it just as it says, pork chop with mushrooms and onions on top.

For a side, I had bought an eggplant dish I wanted to try from another recipe I had perused in a magazine. I sliced the eggplant into rings and then lightly salted the eggplant, then brushed an approximately 50/50 olive oil and balsamic vinegar mix on it, then grilled it. I thought that was really yummy but Tony thought it was a little too tart. He might have liked it better if I hadn't finished off the dish by using the remainder of the vinaigrette on the eggplant after we took it off the grill.

Overall it was a successful meal. I will certainly use the pork dish again, with a different veggie side (anything goes, I am thinking steamed broccoli), and maybe make the eggplant dish just for myself for lunch. I thought it was great!

I will use less salt on both probably, definitely the pork( I try to watch our sodium content). Tony suggested Mrs Dash next time instead of salt and pepper, which is something I am game to try, or a less flavorful and generic grill seasoning (the ones I have are rather specific) so the mushroom and onions are still the highlight of the dish.

This meal left both of us full, and kept me under my calories for the day (hooray!). I really enjoy how filling mushrooms are :]

So that is my new recipe for the month. I am sure there will be more especially as I explore with catfish and pork more :] I hope they are all yummy!

Zucchini Bread Day

Annually, my mom grows delicious zucchini in her garden, and annually, there is Zucchini Bread Day(s). On these days, I make lots and lots of Zucchini bread for my family (especially my dad) even after I moved out. I use some of the extra large zucchinis and make many many loves a day. Crazy!

So in honor of the 1st Zucchini Bread Day which was last week, here is the delicious recipe, my own creation by combining different recipes and watching the response over the years.



Zucchini Bread
Ingredients:
3 beaten eggs
2 cups sugar
1 cup cooking oil (I use canola)
1 tsp salt
1 tsp baking soda
1.5 tsp baking powder
3 tsp ground cinnamon
0.5 tsp ground nutmeg
0.5 tsp ground cloves
2 tsp vanilla extract
2 cup grated zucchini (with rind)
1-1.5 cups chopped nuts (optional) (I use walnuts)
3 cups flour

Instructions:
Mix all ingredients together. I find that doing it in the order listed is easiest, but it doesn't matter.
Lightly grease 2 loaf pans (medium or large size)
Bake at 350 degrees Fahrenheit for 1 hour in the middle of the oven
Cool in the pan first on cooling rack (approx 10 min), loosen sides of loaf from pan with butter knife, remove from pan and finish cooling on cooling rack.
Yields 2 loafs.

These freeze nicely!

back to "school" shopping, kasia style

Austina and I enjoyed a fantastic visit to Target in Denver for some quality sister time. I had flagged quite a few things in the circular and was excited to get them all and help organize our house! I also found a few other goodies to boot :] Since there is no back to school shopping for me this year, I guess this qualifies as the closest thing, well at least until all the scrubs and shoe shopping for a nursing job happens :]

the green couch is now upstairs. I actually rather like having a little more space. we are thinking of shopping for a couch that will take up only the wall where the green couch is now and have a lounger piece extending along under the window. I am also contemplating moving the keyboard upstairs and Athena's kennel downstairs then putting more bookshelves in the office. hm. possibilities.

farwell couch

Today Jason is going to come pick up the couch he has been letting us borrow :[

It fit so perfect in our house!

So I vacuumed it and fixed the few little unraveled edges today in preparation for it to depart.

So sad.

For now we will move the green couch I have had since starting college upstairs and use Eastin's futon downstairs, and we will possibly shop for a new couch later this week.

We are sad to see this great comfy couch go, but thankful to Jason for letting us use it in the mean time while he was off in Afghanistan serving with his Army National Guard unit.

Hopefully it can be just as comfy for him and his girlfriend Linda as they finish their degrees at CU Boulder.

We will go visit it :]

adjustment period

I am experiencing this odd adjustment period from going to studying all day every day to having nothing to do but chores. Work is only giving me around 2 days a week now, so I am home by myself the majority of the day during the week, and yet I seem to not be getting things done.

I feel as though I should be more productive, the office is still a mess of papers and it took me almost 4 days to finish laundry folding, but the days still seem to fly by.

I am learning how to adjust to this home body type life. It just makes met think about what the adjustment will be like once I start a nursing job.

Tony and I were talking about this too, adjustments, as he starts a new position with the National Guard and I am embarking on a nursing career, we are constantly adjusting and learning how to fit into these new roles and adapt around them. I guess that really is what life is, adapting to life, but it's been interesting for me this week. Hopefully I will get better at getting things done by next week.

the big day....for a nursing school grad

The big day has come and gone with good results.

The NCELX was last Thursday. Erin and I went together and I was so glad we had each other!!! We said a little prayer before going in.

The test went well for me. I finished in 75 questions and was feeling good about the a positive outcome as a result. Erin stayed for 180 questions and was a nervous wreck when she got out, but I really thought she did fine.

On Saturday, we went up to Leadville and I had cell service and used my on phone internet browser to check my results (I checked every moment until I lost cell service on the way up on Friday) and I PASSED! HOORAY!!!

I of course needed to immediately call Erin, and SHE PASSED TOO!!!!!!!!

I knew she would.

So God blessed us both with PASS as the "unofficial" test results for both of us, hooray.

Now we wait for the test results to get passed on to the State Board of Nursing and for our results to become offical and our licenses to be issued.

I have been following up with Evans Army Hospital and it sounds like I still have a good shot for a position there. I check in with the USAFA today, since it is so much closer, but it sounds like they aren't hiring new grads/civilians or such.

I am so happy that the test is over and "normal" life can resume! I almost didn't know what to do with myself today that I didn't have to study all day!

So I am quite excited as should be expected, but still a little nervous about having to become an acutal nurse. ACK!

It will all work out.

So for now I stay at the Marriott and try to catch up around the house and get some projects done after I finish cleaning/organizing from the crazyness from before the test and from going camping right after. We actually may have groceries in the house this week haha :]

I pretty much had a bad attitude about going camping this past weekend since it was right after the test but it turned out to be a lot of fun, even though I had some crazy asthma attack/altitude reaction that I've never had when hiking that ended up in searing headache from hypoxia and feeling like a vice was on my chest all the time. Uphill was awful.

I was really hurting but pushing along, but going slow. Tony was so great and would stop and wait for me and eventually when Nate and Matt sped ahead of us, he offered to let me stop and wait for him to catch up with Nate and Matt to tell them we were going back.

It was great. After resting it was much better, but I would still get severely winded with any exertion.

Makes me sort of sad to think maybe I can't really handle altitude like a good Colorado girl.

Anyways, camping was fun. We went to a place on Highway 24 between Minturn and Leadville where Camp Hale used to be, which was even cooler given Tony being in the Army National Guard. We even stopped by the 10th Mountain Division memorial.

It was beautiful! Everywhere! We even cheated a went to Leadville for Margs and Mexican food after the crazy hike (which took it out of everyone, not just me).

In the end it was good to get away and enjoy nature, even though it was overwhelming when we got home with all the mess that was left from packing so quickly after the test, but today was a nice little catch up and lazy day and tomorrow I will finish up and get back to it all.
